These easy oven roasted potatoes are crispy on the outside and soft and smooth on the inside. They only take minutes to prep and are delicious with a simple olive oil, salt and pepper or you can make them more savory with onions and rosemary.


  • 1 pound baby Yukon gold potatoes
  • 2 tablespoon olive oil
  • 1/2 teaspoon salt (add more to taste)
  • 1/2 teaspoon pepper


  1. Preheat oven to 400°
  2. Rinse potatoes and slice in quarters lengthwise.
  3. Add potatoes, olive oil, salt and pepper to cast iron skillet.
  4. Roast in the oven for 20 – 25 minutes until desired brown on the outside. Toss halfway through to brown all sides.
