Description
These easy oven roasted potatoes are crispy on the outside and soft and smooth on the inside. They only take minutes to prep and are delicious with a simple olive oil, salt and pepper or you can make them more savory with onions and rosemary.

- 1 pound baby Yukon gold potatoes
- olive oil
- salt
- pepper
Instructions

Preheat oven to 400°
- Rinse potatoes and slice in quarters lengthwise.
- Add potatoes, olive oil, salt and pepper to cast iron skillet.
- Roast in the oven for 20 – 25 minutes until desired brown on the outside. Toss halfway through to brown all sides.
