This easy oven roasted potatoes recipe takes less than 15 minutes to prep. They are crispy on the outside, creamy and fluffy on the inside and full of flavor. The perfect side dish for any meal!
- 2 pounds baby new potatoes, sliced lengthwise in quarters
- ¼ cup olive oil
- olive oil spray
- 1 teaspoon salt
- ½ teaspoon pepper
- Preheat oven to 425
- Slice potatoes.
- Mix in bowl with olive oil, salt and pepper.
- Lightly spray baking sheet with olive oil.
- Bake for 10 minutes.
- Rotate potatoes.
- Bake another 10 minutes or until browned.
