This make-ahead breakfast casserole with sausage, eggs, cheese and bread is perfect for Christmas morning.
Make this casserole on Christmas eve and cover it and put in the fridge overnight. When you wake up the next morning before the kiddos start opening presents, pop it in the oven and set a timer. Dump some coffee in your cup and head back to the tree and chaos. It cooks for about 90 minutes while you enjoy your Christmas morning!

Tips & Notes
If you are not feeling like cleaning another dish, just dump the whole thing in a casserole dish and mix gently. No need for the bowl.
Make this anytime, cut it into portion-sized pieces and freeze. Pop it in the microwave for a quick kids meal before school.



Sausage Egg & Cheese Breakfast Casserole

Ingredients
- 9 eggs
- 1 pound sausage
- 2 cups shredded cheddar cheese
- 3 cups whole milk
- 9 slices white bread
- 1 teaspoon dry mustard
- 1 teaspoon kosher salt
Instructions
- Cook sausage in a skillet over medium heat until brown throughout. Crumble into small pieces with spatula.
- Tear bread into 1 – 2 inch pieces.
- In separate bowl whisk eggs, milk and dry mustard.
- Add cheese and cooked sausage to bread and stir to combine.
- Mix together bread mixture with egg mixture.
- Pour into greased 9 x 13 baking dish.
- Cover and chill overnight.
- Bake covered at 350 degrees for 45 minutes. Uncover and bake for an additional 45 minutes until eggs are cooked through and top is lightly brown.
- Enjoy.

Notes
It is doubtful you will have leftovers, we haven’t in over 20 years, but just in case, this freezes nicely in portion sizes.
