Tater Tot and Bacon Casserole

The perfect side dish for your summer barbecue. Or comfort food in the fall and winter. Or if you are asked to bring a side dish to any party and you want to steal the show. Potato salad is so 1950. Tater Tot Casserole? So right now.

Tater Tot Casserole

Prep Cook Total Yield 8-12 Servings

Ingredients

1 pound bag frozen round potatoes (round tater tots)
6 slices bacon1 onion, chopped
3 cups cheddar cheese
1 can cream of chicken soup
1/2 cup heavy whipping cream
olive oil spray

Instructions

Thaw out frozen potatoes.

Preheat oven to 350 degrees.

Fry bacon until lightly crispy. Pat the grease off and chop.

Chop onion.

Saute chopped onion in bacon grease until softened and lightly browned.

Empty the can of cream of chicken into a bowl. Then fill the can halfway with heavy whipping cream. Dump into the bowl with cream of chicken soup and stir until completely mixed.

Lightly spray 9 x 13 casserole dish.

Put a small layer of chicken soup mixture in bottom of casserole dish.

Layer 1/2 of the potato rounds.

Layer 1/2 of remaining soup mix, onion, bacon and half of the cheddar cheese.

Repeat.

Cook in 350 degree oven for one hour or until cheese is lightly browned.
