Kale and Brussels Sprout Salad with Gruyere

This kale and Brussels sprouts salad will make you love kale. It’s full of sweetness, crunch and nut flavored Gruyere cheese.




  • 2 tablespoons grapefruit balsamic (I get mine from baker & olive)
  • 3 tablespoons olive oil
  • 1 tablespoon chopped shallots
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon salt
  • pinch of pepper


  • 1 large bunch kale, washed and shredded
  • 2 cups raw Brussels sprouts, shredded
  • 1 cup shredded gruyere cheese, freshly grated
  • 1 cup pistachios (or slivered almonds)


  1. Add all dressing ingredients in a jar with a lid and shake.  at least one hour before serving.
  2. Combine all salad ingredients in a bowl.
  3. Toss salad and dressing until evenly coated. 
  4. Enjoy.
